Malta nougat seller in Rabat - Maltese Nougat - QubbajtNougat is a surprising favourite sweet of the Maltese. This is probably due to its popularity and association with local traditional Catholic festas and other outdoor events.

Most Maltese Nougat makers claim their products are made using a secret family recipe!

Malta - Nougat - Maltese Nougat - QubbajtThe main ingredients of Nougat made in Malta are: glucose, white sugar, cinnamon, egg white, vanilla essence, hazelnuts, almonds, glace cherries and water.

A basic recipe for Qubbajt / Maltese Nougat

Ingredients:

800g sugar
300g roasted almonds or hazelnuts
1 tsp freshly powdered cinnamon
1 tsp vanilla esscence
rice paper

Method:

Prepare by lightly oiling a shallow baking tray and line with greaseproof paper, then place a sheet of rice paper in the bottom.

Dissolve the sugar in 250 ml water over low heat in a heavy saucepan, shaking but not stirring, boil to 154 degrees celscius.

Add the vanilla essence.

Grease a marble or a similar slab with a little oil mixed with water and spread the nuts over it, sprinkle the cinnamon, then pour the hot syrup over the nuts, turn and work the mixture with two spatulas.

When the mixture starts to harden; spoon it into the container lined with the rice paper and leave to cool.
